Soft Sugar Cookies with Vanilla Frosting

This is a recipe I came up with about 10 years ago by mix and matching about five other sugar cookie and frosting recipes. I serve these cookies every year for Yarrow Avenue Collection's Christmas Open House and then make more batches right before Christmas. This is my family's favorite Christmas cookie!

Soft Sugar Cookies with Vanilla Frosting

Sugar Cookies

2/3 cup shortening

2/3 cup softened butter

1 1/2 cups white sugar

2 eggs

2 tsp vanilla

2 tsp baking powder

1/4 tsp salt

3 1/2 cups flour

Preheat oven to 350 degrees. In a medium bowl cream the butter, shortening and sugar. Mix in the eggs, vanilla, baking powder and salt. Slowly add in the flour and mix until completely incorporated. Roll into walnut sized balls, place on a lightly greased cookie sheet. Lightly flatten dough balls with the palm of your hand. Bake for 11 minutes and cool on a wire rack or towel. Cool completely before frosting.

Vanilla Frosting

1/2 tsp salt

2/3 cup milk

2/3 cup shortening

1 tbsp vanilla

1 bag powdered sugar

Beat first 4 ingredients with an electric mixer until combined. Add in the powdered sugar and slowly mix until combined. Mix on high speed for about 20 seconds or until smooth. Frost the cooled cookies. If using sprinkles, be sure to sprinkle right after frosting a cookie because this frosting sets up quickly.
