October First

Today is the first day of October and it actually feels like October here in Iowa. The air is chilly, combines are running and leaves are starting to change.

I figured it would be fitting to share a recipe today that tastes like Fall should taste. I found the recipe in a church cookbook I use often. Our littlest kiddo says it tastes like Apple Cider so that is what we now call this.

12 oz lemon jello

1 cup cinnamon red-hot candies

4 cups unsweetened applesauce

2 tbsp lemon juice

2 dashes salt

Dissolve jello and cinnamon candy in 4 cups boiling water. This gets a bit sticky and clumpy for a minute but it does soon all melt down and gets smooth. Add 2 cups cold water. Stir in applesauce, lemon juice and salt. Chill in a 9x13 pan until firm.
