While looking for a coffee cake recipe that used a boxed yellow cake mix, I came across this one from Lauren's Latest. I was immediately intrigued by it because it calls for crushed graham crackers in the streusel layer. I have never seen a coffee cake recipe that includes graham crackers so I was anxious to try it out.
Wow! There is a depth of flavor to this cake that I have never tasted in any other coffee cake. You don't necessarily taste the graham crackers but it brings alot of flavor to the cake.
Cinnamon Streusel Coffee Cake
1 1/2 cups graham cracker crumbs
3/4 cup packed brown sugar
3/4 cup chopped pecans or walnuts (I didn't have nuts on hand so omitted this ingredient)
1 tsp cinnamon
2/3 cup melted butter
1 package yellow cake mix
1/2 cup powdered sugar
1 tbsp milk
-Preheat oven to 350 degrees.
-In a small bowl combine the cracker crumbs, brown sugar, nuts and cinnamon. Stir in the butter and set aside.
-Prepare cake mix according to package directions.
-Pour half of cake batter into a greased 9x13 pan. Sprinkle with half of the graham cracker mixture (I found it easiest to sprinkle it by hand). Pour remaining batter on top and then sprinkle remaining graham cracker mixture.
-Bake at 350 degrees for 30-40 minutes or until a toothpick inserted in the center comes out clean.
-For the glaze, combine powdered sugar and milk. Drizzle over the cake.
